Weekly menu: Vitatas 31

It was a bit of a puzzle again, but here is the weekly menu :)

In the bag we have: iceberg lettuce, endive, broccoli, 2 zucchini, pumpkin and 2 kohlrabi.

The menu for week 5-6 will be:
Friday: Endive mashpot
Saturday: Blini's with scrambled eggs (page 83 from van seizoen tot seizoen)
Sunday: Baked potatoes & broccoli with vegan "cheese" sauce. Recipe from Vegetus (Dutch)
Monday and Tuesday: Pasta with tomato, mascarpone and zucchini.
Wednesday: Kohlrabi risotto. Recipe from Echt eten Puur koken (Dutch)
Thursday and Friday: Pumpkin lasagne with tomatoes and basil. (Page 100 from Het Pompoenboekje)
Bento: Zucchini and pesto burgers. Recipe from Amuse your Bouche.

Weekly menu: Vitatas #30

Another week, another bag!


Cabbage, cabbage and more cabbage, this bag is a real cabbage party. Other than various kinds of cabbages, there are turnip tops, fennel and avocado.

The menu for week 4-5 will be:
Thursday: wraps with avocado-egg salad
Friday: Pizza (we can't cook this Friday)
Saturday: Voluenteer dinner with Abunai!
Sunday: Turnip-top mashpot
Monday and Tuesday: Vegetarian Shepherd's Pie
Wednesday: Fennel Risotto
Thursday: Red Cabbage and Pear Soup
Friday: Leftover day or something
Lunch options: Avocado Hummus and Pita Bread

Vitatas #29

So another week, another menu. I do not have much time to spend in the kitchen next week. It will be a hectic week. So I have planned to cook a lot for multiple days. This does not make a super exciting menu, but it works. The Thursday and Friday are always pulled together now, so Nick doesn't have to do groceries two times a day so they will be double on the menu ;)


In the bag there is Chinese cabbage, broccoli, parsnip, zucchini, turnip tops and lettuce. From last week I also have 2 leeks.

The menu for week 3-4 will be:
Thursday and Friday: Cauliflower curry
Saturday: Turnip top mashpot
Sunday: I am at friends and Nick will order take out
Monday and Tuesday: Easy pasta with zucchini
Wednesday: "Chicken" teriyaki and stir fry noodles (with Chinese cabbage)
Thursday and Friday: Quiche with leeks and other leftover veggies.

No weekend baking, no extra stuff. All though I long for salad lunches like pasta salad or couscous salad, I hardly have the energy.

Vitatas #28

We didn't get a vegetable bag in a while, with the busy December month and my failing health, the planning flew out of the window. I am not sure if we will be getting a veggie bag every week, but at least for this week we did and I made a menu.


In the bag there are: 3 carrots, 2 leeks (hiding in the back), a cauliflower, beans, Brussel sprouts and a yellow bell pepper. Quite a variation. Zeronic and I both don't like Brussel sprouts though, so I am consulting some people on recipes for Brussel Sprouts haters ;) So if you have any suggestions to make sprouts sweet, please tell me!

The menu for week 2-3 will be:
Thursday and Friday: Easy pasta with mushrooms, zucchini and tomato mascarpone sauce with veggies we already bought.
Saturday and Sunday: Couscous salad
Monday: Something with Brussel sprouts
Tuesday: Mashpot with green and white beans
Wednesday: Carrot risotto from Amuse Your Bouche
Thursday and Friday: Cauliflower curry (page 82 - Albert Heijn eetboeken reeks - vegetarisch)
Weekend Baking: Coconut Custard Pie

Vitatas #27

Yes, we have a veggie bag again this week :) All though I am sick atm, I managed to make a simple menu for the week. Actually a bit longer because I still had some leftover vegs that I needed to use first.


In the bag is bok choi, 2 crops of endive, broccoli, beans and carrots. There isn't much new this week because I have no clue when I will be healthy again and atm Zeronic is doing most of the cooking.

The menu for week 47-48 will be:
Thursday/Friday: Couscous salad (recipe in the recipe index)
Saturday: Endive mashpot
Sunday: we eat at my moms
Monday: Noodle soup with bok choi and endive (recipe in the recipe index)
Tuesday: we have no time to cook
Wednesday: Broccoli fritatta (recipe came with the bag)
Thursday: Pasta with fennel beans (recipe in the recipe index)
Weekend Baking: French Apple Pie (yes, still... )

As you can see not much new here. I am curious though how that fritatta will turn out because I never really made one before. Oh well ;)

Vitatas #26

I am still cooking from cookbooks a lot for my cookbook challenge. (see the banner in the left sidebar for more info) and mainly from The meat Free Monday cookbook that I currently have for review :)


In the bag this week we have: Hass avocado, chicory, bok choi, little gem lettuce, raddishes, spaghetti pumpkin (so pretty!!) and sweet potatoes.

The menu for this week will be:
Thursday and Friday: Potato oven dish with bell pepper and mushrooms (from last week) and faux meat.
Saturday: Warm apple-radish salad (Meat Free Monday Cookbook p52)
Sunday: Noodles with veggie stir fry (bok choi and other vegs) (Meat Free Monday Cookbook p114)
Monday: Indian spiced coconut-yam soup (the Karma Chow Ultimate Cookbook p95)
Tuesday: We have no time to cook, so we will just do take out or something easy
Wednesday: Pasta with tomatosauce and pumpkin (Dutch recipe here)
Weekend baking: Lemonies (Lemon Brownies, recipe here)

Vitatas #25

And it is time for another weekly menu. This week I have kept it fairly simple because of my fatigue, which is bothering me greatly at the moment. It leaves me with nagging pains in my joints, general tiredness overall and crankyness because I dislike it so much that I don't get enough done. Anyway.... we still have to eat, so here is the weekly menu!


I love the look of this bag! Look at the rainbow carrots! Aren't they pretty? :)
In the bag: Rainbow carrots, Chinese cabbage, parsnip, leek and sweet potato.

The menu for week 43-44 will be:
Thursday/Friday: Broccoli and potato oven dish with last weeks'broccoli.
Saturday: We are eating out
Sunday: Mashed sweet potatoes with cabbage (in the recipe index)
Monday: Carrot and black eyed bean stew (Meatless Monday Cookbook p205)
Tuesday: Noodles and stir fry veggies, with cabbage, carrots and other vegs.
Wednesday: Curried Leek and apple soup (Soup of the Day, p228)
Bento: Onigiri

I wanted to make carrot cake again (my first try turned out too spcy for my taste) or carrot cake muffins. But that requires baking soda, which I don't have atm and I need to buy that at a special store here. Maybe next week, if I have enough carrots left over.

Vitatas #24

It has been a very long time since I posted my last menu with a veggie bag on my blog. For the past couple of months we just didn't have many veggie bags, or I didn't have time to blog about it. This weeks bag makes quite a puzzle again ;) I also have planned out my menu till Saturday before the bag came in because of a Greek cookalong that is coming up :)


In the veggie bag are: 1 celeriac, 2x corn on the cob, a broccoli, a smalle butternut squash, fennel, beets. Zeronic and I both really dislike beets. We have tried to make them in several ways, but we just don't like them...

The menu for week 42/43 will be:
Thursday/Friday: Nacho ovendish with avocado, bell pepper, corn and kidney beans. (recipe in the recipe index)
Saturday: Savoury Stuffed Pittas from a vegan taste of Greece (p34)
Sunday: Roti with potato, pumpkin and egg. (recipe in the recipe index, only this time I use the option with pumpkin instead of beans)
Monday: Fennel risotto (Dutch recipe here)
Tuesday: Mashpot with celeriac, eggs and chives. (non vegetarian recipe here, going to adjust it)
Wednesday: Something with broccoli. I have no clue yet, but broccoli is an easy veggie to work with, so it should be fine ;)

Vitatas #23

It is time for a weekly menu once more. This will be my 3rd week in the VeggieChallenge so I will have 2 vegan days in the menu again.


This week we have: cabbage, iceberg lettuce, fennel, eggplants, corn and zucchini.

To be honest I planned most of my menu yesterday before the bag came in, and now we have only 1 piece of corn on the cob. And 2 eggplants and zucchinis. I love both eggplant and zucchini but now I am simply too tired to change it all around again. I know, I can't really plan in advance with a veggie bag however I knew that I had a busy day today, tomorrow and Saturday. But I will just roll with it. Need to think of something for those beautiful eggplants though.

The menu for week 28-29 will be:
Thursday: Something really simple like soup and bread. (I just heard Nick has a flat tire and we are both really tired)
Friday: Vegan Friendly Vegetable stew (leftover from last week from freezer stash)
Saturday: I will be out all day so probably grab something on the road
Sunday: Corn on the cob in a buttered tomato-cilantro sauce with sweet potato fries
Monday: Gnocchi with zucchini sauce
Tuesday: Mashed potatoes and fennel with some other veggies and tofu loaf from La Dolce Vegan (vegan day)
Wednesday: Masala burgers with masala mayonnaise from Everyday Happy Herbivore. For the mayo I will use the recipe from Gnoe as a base and spice it up. (vegan day)
Optional I will bake lemon poppyseed muffins on Monday from Vegan Brunch, but that depends on my energy level.

The menu is really simple but we are a bit overwhelmed these days. I am not even sure why, there are just so much little things going on that everything seems like too much atm. We originally planned to go to dinner next week one day but it seems that the 4 day marches are stating and that is always a busy week in the city centre because people from all over the world come to our city for that and the surrounding festivities. Not a good time to try vegan in the city ;)

Vitatas #22

It is so hot here today that for a long time, I wasn't even sure I would be able to post at all today. But it is late in the afternoon now and it is a tiny bit cooler, so the cloudy feeling has left my head a little. However I will make this nice and short :)


In the bag this week we have Bok Choy, 2 heads of lettuce, kohlrabi, carrots, cucumber and mushrooms.

The menu for week 27-28 will be:
Thursday and Friday: White bean burgers, with avocado, lettuce and cucumber
Saturday: No clue yet, because we have an Abunai (my volunteer job) weekend
Sunday: We will be out filming with the Abunai crew
Monday: Vegan Friendly Vegetable Stew (the 2nd portion will be eaten on Friday) (vegan day)
Tuesday: Pasta with walnut pesto, mushrooms and sun-dried tomatoes (pesto from Ecofabulous koken in alle seizoenen) (vegan day)
Wednesday: Something with the kohlrabi, I have yet to determine what.

For the vegan days I will make a cucumber spread to eat on my sammies, and I have an idea for vegan pizza toasties. I won't make my own snacks this time around, but there are plenty of vegan cookies that I can get my hands on, so I will try my luck with that.

Vitatas #21

This will be the first menu to be part of the Veggie Challenge and that will have two vegan days in it. I think I have figured it out for the week ;)


This weeks bag has Chinese cabbage, an eggplant, 2 heads of lettuce, chicory and carrots. 


The Menu for week 26-27 will be:
Thursday and Friday: Pasta with spinach, cream cheese and tomatoes 




Saturday: Efteling day, will bring couscous salad
Sunday: Lettuce mashpot
Monday: I decided it will be Nicks cooking day ;) He doesn't know yet ;)
Tuesday: Thai Style Carrot Soup (vegan) from how to cook everything vegetarian app.

Wednesday: Fish flavored eggplant with rice or noodles (vegan) from Puur Plantaardig (page 70)
Snacks: I will make a vegan snack on Monday, will have to decide yet what I will make :)



For breakfast I have bought vegan bread and vegan mushroom pate to try. The soup will also serve as lunch for Wednesday. I also have homemade peanut butter that is vegan :) If I can't get to make my own vegan snack I will get some vegan cookies from the store. Look in the recipe index for the recipes of the pasta, couscous salad en lettuce mashpot, if you are interested :)


Suggestions for easy vegan snacks are welcome! :)

Vitatas #20

It has been a good while since we had a vegetable bag. But Zeronic's hand is almost healed and he can collect them again, so we had a fresh bag of veggies once more. Starting from next week there will be two vegan days in my menu during the month of July. But I had to get back in the swing of menu planning, so I kept it fairly simple this week.


In the bag are fennel bulbs, spinach, lettuce, a huge sweet potato and turnips. I never had turnips before so suggestions on what to do with them are welcome :)

The menu for week 25/26 will be:
Thursday: Sweet potato curry with spinach and naan
Friday: Also sweet potato curry with spinach but in wraps
Saturday: Homemade lamacun (Turkish pizza) with salad
Sunday: We have dinner at my mom's
Monday: Pesto pasta with fennel beans (recipe here)
Tuesday: Potato-turnip-garlic mash with faux meat and more veggies from Just Vegetable Recipes
Wednesday: Quinoa salad with feta cheese and watermelon from Annie's Eats

Hopefully I will be able to make a good partly vegan menu next week :) I have at least plenty of vegan cookbooks laying around :)

Vitatas #19

I am a bit late today with the weekly menu, but now that I am done and I have enough energy to post, I thought, lets get this out of the way :) I had a little help this week from my friend Fhant who made some suggestions to fill menu gaps.


In the vegetable bag there are a large crop of lettuce, 3 leeks, 1kg of carrots, 2 zucchinis and a cucumber. I also have 3 bell peppers in the fridge that need to be used this week.

The menu for week 18/19 will be:
Friday: Sundried tomato and pesto burgers on request of Belsammael ;) (page 68 of the best Veggie Burgers on the planet)
Saturday: Lettuce wraps, inspired by this recipe that I pinned on Pinterest.
Sunday and Monday: Vegetable stew with carrots, white beans and more, based on this recipe that I pinned on Pinterest.
Tuesday: Carrot Mashpot, a dish that I disliked as a child but recently learned to eat thanks to friends.
Wednesday: Potato-Leek soup (recipe here)
Thursday: Bell Pepper Burgers (page 43 of the best Veggie Burgers on the planet)
Snack: Carrot Cake, from the Dutch site Goddelijke Huisvrouw through Pinterest.

As you can see there are a lot of Pinterest recipes on there. That is because I entered the Pin it and Do it Challenge from Trish! :D Read more about that on my other blog Uniflame Creates :)

Vitatas #18

Another weekly menu... and damn what has blogger changed. Lets see how this will go ;)


In the bag this week there is butter lettuce, cauliflower, chicory, leek and a zucchini.

The menu for week 16-17 will be:
Friday: Lettuce Mashpot (recipe here)
Saturday: Chinese tomato soup (from the Dutch site Yummy in my Tummy)
Sunday and Monday: Pasta with mushrooms and zucchini (from the Dutch site Arjen Kookt)
Tuesday: Baked potatoes with creamy spinach and AH fritatta
Wednesday: We grab a bite in the city
Thursday: Sundried tomato and pesto burgers (page 68 from the best veggie burgers on the planet)
Snack/bento: Cauliflower Pizza bites (from Damy Health), Strawberry Smoothies.

4 new recipes this week! I am a bit behind on posting everything I have tried (and the mediocre recipes won't even make it) but I basically only post 2 recipes a week.

Vitatas #17

It has been a while since I posted a weekly menu post. I still planned most of the weeks but I just didn't have the time/energy to post about it. Anyway this week I have time and a nice menu with three new recipes :)


In this weeks vegetable bag there is: 1 bulb of fennel, a large crop of butter lettuce, 2 zucchinis, a cucumber, cherry tomatoes and broccoli.

The menu for week 15-16 will be:
Thursday: Quinoa and black bean burgers (from the cookbook healthy in a hurry)
Friday: Baked potatoes, salad and some meat replacement.
Saturday: We go out to the movies and grab some dinner beforehand
Sunday: Fennel risotto (from the Dutch site smulweb)
Monday: Cream of broccoli soup (recipe here)
Tuesday: Zucchini pie with feta (from the Dutch site culy)
Wednesday: Zeronic will cook something yummy while I am at school ;)

Vitatas #13

So it is time for another weekly menu post! Sadly something went wrong with our order this week and we didn't get the bag we ordered. We always order the bag with extra veggies but got a normal one instead.

In the veggie bag this week there are two zucchini (courgette), celery, butter lettuce, broccoli and celery root. Next to the bag we also got black salsify, avocado and sweet potato. The menu will be kept fairly simple this week, because I don't have a lot of energy with these sub-zero temperatures. A lot of easy recipes on repeat and not much new this week.

The menu for week 6-7 will be:


Friday: Lettuce mashpot (recipe here)


Saturday: Cream of Broccoli soup (recipe here)
Sunday: We are at Tsunacon, a Japanese culture convention
Monday: Black salsify and avocado salad


Tuesday: Gnocchi with courgette/zucchini sauce (recipe here)
Wednesday and Thursday: Courgette/zucchini- bell pepper quiche


Bento for Tsunacon: 3 different stuffed onigiri including Sweet Potato onigiri (recipe here)
Bento stash: Courgette/zucchini fritters which I meant to make last week but couldn't due to illness. (recipe here)

I will use the celery root next week, but who has a good recipe for me to try?

Vitatas #12

We took a two week break from the Vitatas because we had other obligations on Fridays and didn't have time to pick up the bag. But this week we have one again, with a lot of tasty goodies!


In the bag there is cauliflower, a large crop of butter lettuce, 3 leeks, 1 large zucchini/courgette, a bag of stir fry veggies and cooked beets (which will be donated ;) ) We also got a bunch of fruit this week because my body is screaming for smoothies. I have a slight cold and I have a real craving for them despite of the cold weather.

The menu of week 5/6 will be:
Friday: Pancakes with cream cheese and chives (I have some chives in the fridge that need to go)
Saturday: Lettuce mashpot (recipe here)
Sunday: We get some take out because we have a meeting here.
Monday: Noodles and stir fried veggies
Tuesday: Creamy potato-leek soup (from the how to cook vegetarian app)
Wednesday: Something with cauliflower (Zeronic is in charge of cooking that day, so I let him decide)
Thursday: Quick burgers (Everyday Happy Herbivore, page 81)
Lunch/bento stash: Zucchini/courgette fritters (recipe here)
Snack: Smoothies!

Vitatas #9 for Weekend Cooking

Normally I post my organic vegetable bag on Fridays. But I was extremely busy yesterday so I thought it would be nice to share my bag of fresh produce for Weekend Cooking! Together with my veggie bag, I always post a weekly menu with it. It is for inspiration for my readers to see what good vegetarian and vegan meals you can make. But also for myself, because it is easy for me to have it posted so I can look back during the week.


This is a normal organic produce bag for 2 persons. I often have and extra large bag, but I also have veggies from last week in the fridge. So I change which bag I choose depending on how much I need. In this bag there is a broccoli, a large crop of endive, red cabbage, parsnip and a bulb of fennel. In the fridge I also have, half a butternut pumpkin, a courgette, more fennel, mushrooms, leek and a large carrot.

The weekly menu for week 50-51 will be:
Friday: Baked endive mashpot. (recipe here)
Saturday: Going out for sushi on a friends b-day.
Sunday: Stir fried endive with noodles (recipe came with the bag, will blog it if it is good!)


Monday: Risotto with butternut squash (recipe here)
Tuesday: Gnocchi with courgette sauce (Made this last week and it was such a hit, that we will make again! Recipe here)
Wednesday: Turkish bread with homemade mushroom ragout (recipe here)
Thursday: Undecided, I have a few options open: cream of broccoli soup or carrot-fennel soup. Not sure yet!
Bento/lunch: Home made bean pate on bread.

I opted for an easy menu this week with dishes that take 30 minutes to prepare max. Still I have some new recipes on there. I wanted to make mushroom ragout and bean pate for a long time now and the butternut risotto I just wanted to try again, because I burned it last time because I was too tired to cook... So... take 2 on that one!

Vitatas #8

I got a beautiful vegetable bag again. Only what to do with all those beets?! I still have a batch of pre cooked ones in my fridge as well. But this week we will have beets on the menu!


In the bag there are: lettuce, celery, bok choy, white cabbage, beets, a muddy carrot and 2 courgettes. In my stash I still have leek, sweet potato, cooked beets and some broccoli.

The menu for week 49/50 will be:
Friday: Oven fries with a salad. (Really low on energy today, so I will keep it simple)
Saturday: Noodle Soup with bok choy (recipe here)


Sunday: Gnocchi with a sauce from courgette and sundried tomatoes. Inspired by Rozemarijn. (recipe here)
Monday: Baked potatoes and coleslaw in a pesto mayonnaise and a burger or other kind of meat replacement.
Tuesday: A Pataks curry with sweet potatoes.
Wednesday: Broccoli-Leek mini quiches.
Thursday: Spiced up beets in coconut milk.
Lunch: French toast and maybe Turkish bread with hummus.

Vitatas #7

Menu planning was another challenge this week. I mean, I have 4 leeks! And they aren't planned in yet ;) I have several leek recipes but I will wait until Zeronic is home so he can have a say too on which one it will be :) To add to this mix: I have also 2 courgettes and a butternut pumpkin left. I also bought cherry tomatoes :)


The Weekly menu for week 48/49 will be:
Friday: Pumpkin Risotto with grilled courgette and oven roasted cherry tomatoes.


Saturday: Onigiri with Sweet Potato filling (recipe here)
Sunday: Turkish Bread with Pizza topping from homemade tomato sauce, courgette, eggplant and cherry tomatoes with some cheese. (Sharing with friends)


Monday and Tuesday: Lasagne with carrots and pesto, a recipe that Zeronic wanted to try. (recipe here)
Wednesday: Fennel Soup
Thursday: Creamy Leek and Spinach with pasta
Bento: Broccoli Muffins (recipe here)
