Bento #12 - Pasta Bento + Sweet potato onigiri recipe

A new week, so new bento :) The boyfriend is better again so he is off to work and needs lunch XD

 

The bento contains pasta with red pesto & mascarpone sauce, broccoli, cherry tomatoes & beans. In the other tier there is some sweet potato onigiri (recipe below), laughing cow cheese, red grapes & meatballs in tomato sauce. It is a light bento for his early shift. BTW: do note the size of those grape, they are huge!

 

I made these filled onigiri together with the boyfriend last weekend. I made all kinds of sushi actually, since we had a sleepover at our place. And well this was his contribution.

Sweet Potato Onigiri
2 cups of sushi rice
1 sweet potato
2 slices of cheddar cheese
some fresh chopped chives

Just prepare the rice like you would normally. I use a rice cooker for it, which makes it very easy ^_^ Peel, chop & cook the sweet potato. Then mash it up and mix it with the cheddar (it will melt through it) and mix the chives gently in the filling.

We used plastic wrapper to shape the onigiri. You place the wrapper over a cup and place a bit of rice in it, a ts of filling and more rice to top it. Get the 4 corners of the wrapping together and twist them shut, forming a ball in the rogress. Then it is really easy to do, also for beginners. My boyfriend only did this once before. Only he makes them a bit too big because he has big hands XD
I was inspired by this tutorial on lunch in a box, though I didnt use cookie cutters this time.

For tomorrow's bento I spend 1.5 hours in the kitchen on a charaben, so look forward to that tomorrow :)

  1. wow! And a new post already! I just happen to have some sweet potato in the fridge!! YAAAYY!!! Will try this recipe soon! You may try to use the google translator to understand most of my posting, I still can't make up my mind just which language shoul it be on... :S
