Weekend Cooking: Pin it and do it challenge

First of all: sorry for the lack of posts here in the past week. I am sick and blogging was the last thing on my mind. Now: I am still sick, but am doing a little better so I want to share my progress on the Pin it and Do it challenge. This is a challenge that is hosted by Trish from Love, Laughter and a Touch of Insanity.The original sign-up post is on my other blog Uniflame Creates, however because the pins I did so far are all recipes, I wanted to post this update here.


I tried three recipes from Pinterest in the past week before I got sick and today I will share what my thoughts on them and of course pictures. First I tried Vegetarian Lettuce Wraps, based on this recipe on the pioneer woman. I changed around some things like adding red kidney beans and replacing chili powder for sweet paprika. They are actually vegan and the combination gives it a bit of a bacon taste. Because the recipe is in English, I don't need to translate so just hop over to try them yourself :)



The 2nd recipe I tried is a Vegan Friendly Vegetable Stew from the site Meatless Mediterranean. I never made a stew before but this one was great! It is a good recipe to clear out the fridge and I am keeping my eyes out for bulk recipes like these lately! I added corn and kidney beans here that I had leftover from the lettuce wraps and also a zucchini, because I had lots of zucchini in the bag :) Just check the site for the recipe, I highly recommend it! :)


Lastly I finally made carrot cake! This was something I wanted to try for a long time but I was a bit anxious about. This one is not vegan btw. It is from the Dutch site Goddelijke Huisvrouw, but I won't translate and share the recipe yet, because it does need some tweaking. I loved the topping and the sweetness of the cake but this recipe was way too spicy for me. So I will try again when I have carrots in my vegetable bag next time :)

    The pictures are wonderful. I haven't used Pinterest yet - it's on my list. But I've heard it's a time sucker so I wait until I can sit down for a while and play with it. :-)

  3. Those vegetarian lettuce wraps look good and I am a huge fan of carrot cake. Cooking light has a great recipe for carrot cake that did not use lots of oil that I made for Easter and it was delicious.

  5. All those Pinterest recipes look great. Good for you for cooking from your pinned recipes. I love spicy carrot cake so I'll have to take a look and see if I figure it out.

  8. Great job on making recipes from Pinterest! I really enjoy pinning recipes -- somehow having it visual seems to make it more likely that I'll actually try it.

  9. I am so bad. I have pinned a ton of recipes on Pinterest but I haven't tried any of them yet. I need to get on that. The school year ends in a few weeks so I'm sure I'll be spending more time on cooking related things once I have three months off.

    That carrot cake looks delish. I can't wait to see the recipe once you've tweaked all the bugs out of it. :)

  11. I will check out the stew recipe. Zucchini is one of those veggies that I always add as well, it never fails.
    I sometimes use Pinterest for cooking inspiration and have a foodie board there but I mostly stare at the yummy pics.

  18. So awesome Cynni! and yes--stew is a GREAT way to clear out your fridge. We eat a ton of it in the winter and I always try to put half (at least) in the freezer for future nights. Can't wait to see the carrot cake recipe. I love it too but have never tried to make it.
