Summer Special: Yoghurt-Peach Ice Cream

Now with the hot weather, I thought it would be a good idea to get this fresh ice cream recipe on the blog soon. It is very easy and I enjoyed the combination of flavors. I think you can do this with almost any type of fruit, but I have yet to try that. The original recipe come from Week of Menus.
I have to admit that I don't use the ice cream maker as often as I would like, but I hope to change that this summer! :)


Yoghurt-Peach Ice Cream:
- 3 cups fresh peaches (about 6)
- 2.5 cups Greek yoghurt
- 0.25 cups honey

Peel the peaches and cut into chunks. Mash them in a food processor. Then add the Greek yoghurt and honey, and blend some more. It is wise to change your blade to that plastic circle thingy that comes with the food processor at this point.
Then transfer to the ice machine and let it run for 25 minutes.
Freeze for 2 hours minimum.

  1. can't get much easier than that recipe. I haven't used my icecream maker in years. It is in the freezer, though I should take it out, let it thaw then give it a good wash before refreezing.
