Pin It and Do It: Gnocchi ovendish



It is time again for another round of Pin It and Do It, hosted by Trish from Love, Laughter and a Touch of Insanity. I always love to participate in the challenge, because it gives me an extra reason to cook from my lovely Pinterest recipe board!

I am really glad that Trish hosted this challenge this month, because after VeganMofo, I stopped blogging again. It seems that I need something to keep my blogging butt into gear atm. But moving on to the recipe I want to share. I love gnocchi, but I kept making mostly the same recipe over and over. So I was looking for new and easy gnocchi recipes to try. This ovendish is the ultimate comfort food. It will be on the menu more often, I can tell you that :) Here is the original pin from Uit Pauline's Keuken. But because the recipe is in Dutch, I will translate the recipe below.


Gnocchi Tomato Ovendish (serves 4)
- 600 gr gnocchi
- 1 spring onion
- 2 cloves of garlic
- 1 red bell pepper
- 200 gr brown mushrooms
- 1 package mozzarella
- 300 ml tomato passata
- 2 tsp oregano
- handful fresh basil
- olive oil
- salt and pepper

Boil the gnocchi in water. It is ready when they come to the surface of the water. Put aside. Pre-heat the oven on 200 degrees. Chop onion and garlic, cut the bell pepper in cubes and the mushrooms in slices. Bake onion and garlic first in some olive oil. Add bell pepper and mushrooms and bake for a bit. Then add the passata, and flavour with some oregano, salt and pepper. Add the gnocchi and combine everything. Then place everything in an oven dish and add mozzarella on top. Put in the oven for about 20 minutes until the cheese melts. Garnish with fresh basil.

  1. Mmmm!! Sounds so good and so comforting! I've never cooked gnocchi but I like it and I bet Elle would like it too. Glad this one worked for you!
