Foodblogswap Extra: Vegetable Wraps with Smoked Tofu

As you could read last Monday, I already published a recipe for the Foodblogswap. But I couldn't decide, so here I am with another recipe from Ona Pona's Keukenavonturen. This time we went for a lighter meal and we choose wraps. I love to try all kind of different mixes to put in my wraps, so that is why we ended up picking this recipe :) We also like quick and easy so this fitted nicely. The recipe was already vegetarian, so I didn't have to adjust too much. Somehow we ended up using feta instead of grated cheese because we still had that in the fridge. But I will just use normal cheese next time as the feta was a bit overwhelming.


Vegetable Wraps with Smoked Tofu (serves 2-3)
- 1 spring onion, in rings
- 2 tomatoes, seeded and cubed
- 1 red or yellow bell pepper, cubed
- 4 sprigs of cilantro
- juice of 1 lime
- 150 gr sour cream
- 1 tsp chili powder
- 425 gr canned black beans, drained and rinsed
- 75 gr grated cheese
- 150 gr smoked tofu
- romain lettuce
- 4 tortillas
- 2 tbsp olive oil

Mix sour cream with cilantro, chili powder and half of the lime juice. Wash and cut the lettuce. Warm the tortillas in the oven, as stated on the package. Heat olive oil in the pan. First add the onion and a bit later the bell pepper. Stir fry for about 5 minutes. Cut the tofu. Add tomatoes, beans and tofu to the pan and heat it through for a few minutes. Add the rest of the lime juice to taste, and a bit of pepper if desired.

Spread about 2 tbsp of sauce on a tortilla, then some lettuce and add the tofu mixture on top of that. Lastly put the cheese on top. Roll the tortillas. If desired place them in the oven for 5 minutes on 120 degrees.
