Weekend Cooking: Nacho oven dish

I encountered this dish on Yummy in my Tummy. I really wanted to try it because I never had nachos this way before but it seemed really tasty and it was! I did adapt quite a bit with this recipe and there are many ways to make a similar dish. I upped the veggies versus nacho ratio because after the first time making the dish, I thought the ratio was off and I wanted more veg. So here is my adapted version:

This was the first time I made it, without beans

Nacho oven dish with veggies (serves 3)
- 150 gr nachos
- a small can of corn
- 1 tomato or bell pepper (both taste good)
- 1 ripe avocado
- 2 spring onions
- a small can of kidney beans or black beans
- 125 gr sour cream
- some grated cheese
- salt and pepper

Peel, remove the pit and cube the avocado, remove the seeds from the tomato or bell pepper and cube. Cut the spring onions into small rings. Drain and rinse kidney beans and corn. Mix all veggies together and add a little bit salt (be careful because the nachos are fairly salty as well) and pepper. Spread the nachos in an oven dish and spread the veggies on top. Top it off with sour cream and a bit of grated cheese. Place in a pre heated oven on 200 degrees (180 in microwave oven) for 10 minutes and serve. Make a salad on the side for a complete meal.
