Taco Muffins in a bento |
- 180 gr Vegetarian minced meat replacement
- 1 spring onion, cut
- 115 gr butter, melted
- 4-5 tbsp taco seasoning mix
- 1 cup flour
- 1 cup cornmeal
- 3 tbsp sugar
- 1 tsp chili powder
- 1 cup milk

- cheddar to taste

Bake the spring onion with the vegetarian minced meat replacement and the taco seasoning in some sunflower oil. Use the seasoning to taste, but this is what I used. Mix flour, cornmeal, chili powder, sugar and salt in a bowl. Mix the butter, egg and milk in another bowl. Add the wet ingredients with the dry and stir them together until they form a batter. Add the vegetarian mixture together with grated cheddar and mix that in. Scoop the batter into a muffin tin and bake for 25 minutes in a pre heated oven on 200 degrees. (180 in a microwave oven).

Oh what a great idea to do a Bloggiesta post. I should have baked up something Mexican (muffins? That would fit Marg's post too!). These sounds pretty easy to make.

ReplyDeleteWe had tacos for dinner! I would never have ever thought of even looking for a recipe for taco muffins. Muffins for me are sweet things, but I am sure that looking for savoury recipes would open up a whole realm of possibilities.

ReplyDeleteI love to have all kinds of muffin tins :) They are fun for a bento :) And yes, they have a kick. They are not too spicy but you could make them as spicy as you like :)

ReplyDeleteHey I ones saw those on BentoLunch.net! Yours look cuter! =D I still have to make those! Considering I don't have a stove yet it might be a great idea for a simple dinner ^_^ (with some chilibeans on the side?)
ReplyDeleteOh yeah, I could totally have these as a simple dinner :) (But I really like savory muffins!) A simple Mexican themed salad with beans and corn would go great with this too :)
