Meatless Monday: Gnocchi with Mushroom Sauce

I only discovered gnocchi fairly recently, and all I can say is, where have you been all my life? I just love it! After making the same delicious gnocchi recipe a few times, I decided that is was now time for a new recipe. This recipe is adjusted from "Vegetarisch Fit", a Dutch vegetarian magazine.


Gnocchi with Mushroom Sauce (serves 4)
- about 500 gr mushrooms
- 1 tbsp butter
- 400 gr gnocchi
- 200ml herbal cheese
- 150 gr cherry tomatoes
- a bunch of chives
- salt and pepper

Cook the gnocchi is water until ready. Meanwhile clean and cut the mushrooms, and bake those in a pan with the butter. Cut the chives and tomatoes and add these to the pan with the cheese if the mushrooms are done. Stir together and add some salt and pepper. Warm through until the cheese has melted and a sauce is formed. Drain the gnocchi and place in a large oven dish. Add the mushroom sauce on top of the gnocchi. Optionally you can add a bit of grated cheese on top. Place the dish in the pre heated oven for 15 minutes on 200 degrees (180 for microwave oven).

  1. This gnocchi recipe looks very creamy and tasty! Did you use regular herbed cream cheese or Philadelphia? I haven't had gnocchi for far too long. Will have to put it back on the menu! :)
