Weekend cooking: Broccoli Muffins

Since I am on the go tomorrow, I need something to take with me. I wanted muffins, but I wanted something different. Then I found these Broccoli Muffins over at Cupcakes & Muffins. But since the site is in Dutch I will translate the recipe for you here :)


Broccoli Muffins (makes 12)
- 12 small broccoli florets
- 300gr flour
- 275gr soft butter
- 4 large eggs on room temperature
- 60gr grated cheddar cheese
- 50gr sugar
- 1tsp baking powder
- 1tsp turmeric
- 0.5tsp salt
- 0.5tsp Cayenne pepper

Cook the broccoli florets shortly (about 3 minutes), drain and dry them with kitchen towel. Mix the butter with an electric mixer and add the eggs one by one. Do not add the next egg before the last has mixed into the batter. Stir all the dry ingredients minus the cheese and broccoli together in another bowl. Then add the dry ingredients to the butter mixture. Stir gently for a couple of times until you have a sticky batter. Add the cheese and stir gently once again.

Scoop 1tbsp of batter in each muffin case. Make sure that the bottom is covered evenly. Place one broccoli floret in each muffin case and scoop some more batter on there. Make sure the broccoli is covered completely. Bake the muffins in a pre heated oven on 180 degrees (170 for microwave oven) for 30 minutes until golden brown.  During the baking some butter will bubble up, I discovered. But you don't have to worry about it since this doesn't affect the taste of the muffin. Don't forget to clean the oven afterwards ;) Let them cool for 10 minutes in the tin and let them cool further after that. These muffins are supposed to be eaten cold and make for a great lunch or appetizer.

  3. Of course I tasted one already ;) And yeah they are good :) But I might add more veggies next time, maybe chopped up broccoli instead :)

  4. What a supper idea - I love the combination of broccoli and cheese but to put that in a muffin? Genius. I can see lots of uses for these such as with salads and certtain soups. Thanks for a great idea.

  7. The cheese would be a big draw for my daughter...yes I am still trying to get her to eat her vegetables even tho she is in college :)

    Do you think these muffins would be as good warm as they are cold?
