Recipe: Quick macaroni with mushrooms & mascarpone

For this week I have a very easy pasta recipe that would fall under the category of a students meal. We eat a lot out of that category lately and sometimes with more success than others. This one is a keeper though :)


It doesn't look like much but the taste is very creamy. Quick and easy comfort food. I got this recipe from the Essential Vegetarian Cookbook. (Dutch edition, Het grote vegetarische kookboek)

Quick macaroni with mushrooms and mascarpone (serves 3, the book says 2 but we had leftovers for another portion)
- 250 gr macaroni
- 125 gr mascarpone
- 250 gr mushrooms
- 2 gloves of garlic
- some pepper and parsley

Cook the macaroni. Cut the mushrooms and the garlic. Fry the mushrooms in a little bit of butter, add the garlic and the mascarpone. Wait till the mascarpone melted. Season with some pepper and parsley. Add the macaroni and warm through. Serve with a salad.

  3. This looks and sounds great and ideal for bento. I do a lot of research in libraries and I love taking a bento lunch. I am saving this to try next time. Looks ideal:)

  5. Uh.. it doesn't look very appealing indeed. ;) But I have that very same cookbook and although I haven't made this particular recipe I can say it is a GREAT cookbook! As a vegetarian it belonged to my favourites, along with the series of Eethuis Iris.

    I haven't checked it out as a newbie vegan though. ;)

  6. I agree, the looks aren't that great, but it certainly sounds wonderful. I LOVE mascarpone so this is worth a try. Will add this recipe to my collection.

  9. @Nan: I think you can also eat this with broccoli for example. The mascarpone is a key ingredient, however you could of course make your own creamy cheese sauce. With creme fraiche and any cheese you would like to add. It does affect the taste of the recipe though, but it certainly is an option :)

    @Gnoe: I know, right! This book is all kinds of awesome. I never heard of Eethuis Iris, but I think I need to check them out :)

  10. I like your recipe and your suggestion to Nan. Mushrooms don't agree with me and I would have to leave them out. I like substituting broccoli. I'll give that a try.
