Recipe: Italian Stir Fried Rice


I love stir fried rice, because it is easy and tasteful. I experimented a bit with different flavors and gave the rice an Italian twist :)

Italian Stir Fried Rice:
- 2 cups of rice
- 125gr mushrooms
- 2 hands of pine nuts
- Half a bag spinach
- about 8 sun dried tomatoes
- 2 spring onions
- 2 tbsp red pesto

Cut the spinach, mushrooms, spring onions and sun dried tomatoes. Bake the pine nuts shortly without oil until light brown. Set aside. Cook the rice in a rice cooker. Stir fry the spinach in one pan and the mushrooms and spring onions in another. When the spinach has slunk and the mushrooms are brown, add the mushrooms and the onions to the pan with the spinach. Add sun dried tomatoes. Now it is time to add the rice as well and mix everything together. Lastly add the red pesto and the pine nuts, stir and warm through.

  1. Just like you, I love stir-fried rice :) Spinach, mushrooms and sun-dried tomatoes go really well together too! Hmm, but I'm afraid I'm too Chinese to give it a Western flavor :s I'd probably replace the rice with pearl barley or pasta.

  2. No matter the base (rise, barely, pasta) this mix sound wonderful. I love pesto. Fresh spinach from the farmers market will be available very, very soon.
