#54 - Chimichurri bento

The BF works the 12.00 - 20.00 shift today so he gets a big bento. Basically it contains various side dishes that he had earlier this week. But a different main dish.

The bento contains Chimichurri rice with tofu, paprika & green beans. The side dishes are Japanese cucumber salad, potato-feta pancakes (recipe below), mandarin, chicken-pesto salad & wieners.

Here is the easy recipe for the pancakes. It does take you some time but you can keep them for several days in the fridge :)

Potato-feta pancakes: (makes 12)
- 400gr potatoes, mashed
- 120gr feta, crumbled
- 1 egg, beaten
- 3 spring onions, chopped
- 3 tbsp dill, chopped
- 0.5 tbsp lemon juice
- flour
- black pepper
- olive oil

Mix everything, except for the flour and the olive oil, together in a bowl. Cover it with a lid and leave it in the fridge for an hour or 2. Cover your hands in flour and make little balls of the mixture. Press on them slightly to flatten. Add oil to the pan and bake them for about 2-3 minutes on each side until golden. Lay them on kitchen towel to drain the moist.

  1. I like those potato cakes! I have tried making them before and not had much luck. I think it is because I did not let it firm up in the refrigerator. Thanks for the tip! Nice bento!

  2. The potato cakes are a bit tricky. The key is to use a lot of flour on your hands when you handle them :)
