#38 Melon Pan Breakfast Bento

Today I tried to make Melon Pan for the first time. Since it was a lot of work my Boyfriend helped making them, making it a lot easier :)


In the bento we have Melon Pan, a slice of sweet sugary bread (I didn't make this), apple slices and 2 reine-claude plums.

And now I am going to try to translate this Melon Pan recipe I used ^_^

Melon Pan - Makes 12

Ingredients bread dough:

  • 300gr wheatflour
  • 4gr dry yeast
  • 35gr sugar
  • 5gr salt
  • 6gr milkpowder
  • 180ml water on room temperature
  • 30gr butter
  • sugar to garnish
  • Chocolate chips
Ingredients cookie dough:
  • 80gr butter
  • 90gr sugar
  • 2 eggs, beaten
  • 200gr flour
  • 2gr baking powder
  • 1tsp vanilla
Bread dough:
Mix flour, yeast, sugar and milk powder. Add the water and mix it for 5 minutes. Add salt en butter and then knead the mixture for 10 minutes. Things will be messy in the beginning, but it will work out so just keep going :) You have to place plastic wrap over the bowl and let it sit for an hour so it can add in volume. 


Cookie dough:
Mix the butter and sugar to a mixture, add the egg in parts and keep mixing until all the egg is absorbed. Add the flour and baking powder and stir gently. Mix it by hand till you have a nice looking dough. Split it in 12 equal parts, then cover it and place it for minimal 30 minutes in the fridge. 



After the bread dough has rested for an hour, make 12 equal balls out of it. Make the dough flat and place chocolate chips in the middle then making a ball again. Take a ball of cookie dough and make it flat. Then place it around the top of a ball of bread dough. Make sure you only cover the top of the bread dough, or else your melon pan will break when the volume increases. Roll the ball through some sugar (only the cookie dough part). Then carve some stripes in the cookie dough, or a shape using a cookie cutter. Be careful that you don't cut through the cookie though entirely. Then repeat this with the other balls. 


Place them with six on a plate, cover it and let it rest for 45 minutes. Then place them in a pre heated oven on 180 degrees for about 20 minutes. You have to do it in two batches since they will grow even larger while baking!


Nom! Melon Pan!
