Weekend Cooking: Easy Wraps

I don't have anything Easter related to share, but I did make some very good easy wraps yesterday. I don't know how it is where you live but here in the Netherlands we can buy boxed mixes to make wrap filling. They come with a mix for sauce and wraps and they are pretty expensive. Of course there is also all these extra stuff in it that is fairly unhealthy. Making your own basic wrap stuffing is quite easy, a lot cheaper and more healthy so today I am sharing an easy recipe with you from an example of a wrap stuffing without buying the wrap mix. I do use pre bought wraps though. I know it is not that hard to make your own, but it is time consuming and that time I didn't have.


Easy Wraps (serves 3)
- a 400gr can of kidney beans
- a small can of corn
- 250 gr mushrooms
- 1 spring onion
- 1 red bell pepper
- 1 avocado
- 125ml sour cream
- some grated cheese
- a 15gr can mashed tomatoes
- taco spice mix (your own mix or a pre mixed, but look for the ingredients that it only contains spices and no additional ingredients)
- chili powder
- wraps (I had 2 wraps each)
- some oil

First cut the bell pepper, mushrooms and spring onion. Bake them shortly in some oil until they are done. Mix taco spices to taste with the mashed tomatoes and add this to the pan, together with the drained and rinsed kidney beans and corn. Stir together and taste. Add some chili powder until you are happy with the spicyness. Cut the avocado. Prepare the wraps shortly in the oven. Then spread a layer of sour cream on them, lay out some avocado and pile the wrap filling on top. Top it off with grated cheese.

  1. This looks yummy and so so easy! Thanks for stopping over at my post and Half and Half is just that, half milk and half heavy cream. It is sold like that here in the USA. Sorry I didn't think of others from another country might not understand that:) I will fix that right now!

  7. Looks lovely! I also buy the wrap packs. Over here they contain the seasonging, the sauce and the wraps also and I have to admit I am a sucker for premade taco or fajita sauce.

  15. Looks great. In the UK I have not come across boxes of mixes for wraps, but perhaps I don't look in the right aisles! Hubby rather likes chicken wrap and I apparently can't get the mix right,so I cheat and buy a box ready made and ration them out for his lunches!

  16. I live in the Southwest US, so instead of wraps we usually go for burritos or fajitas, etc., which are also really easy to make. The only wraps I've ever had have been from Subway. :)
