Recipe: Quick Tomato Sauce

I made my own fresh tomato sauce before but because the tomato season is over and that sauce while tasty is time consuming, I needed a quick alternative. I have found one on the website from de Vegetarier that we tried and enjoyed so I will share that here. It is nice to still be able to make a fresh tomato sauce in winter and not have to resort to the pre made ones in the supermarket that are less healthy and more expensive. Quick Tomato Sauce (serves 4)
- 3 tbsp olive oil
- 1 onion, chopped
- 1kg canned tomatoes, drained and chopped
- fresh basil or parsley
- salt and pepper

Bake the onion in the olive oil for about 3 minutes. Add the tomatoes, salt and pepper. Cook the sauce for 10 to 15 minutes until the tomatoes fall apart and the sauce thickens. Add herbs to taste. Optional you can add some grated cheese on top.

Thats it! The sauce is enough for 450 gram pasta. Of course I added some other veggies as well, in this case courgette and red bell pepper. But it can be served with any veggies you have on hand and taste good with pasta. 

You can vary with the sauce endlessly because this is just a base sauce. For a creamier sauce you can add mascarpone or you can variate with the herbs you add. For instance, oregano, thyme or add some garlic.
