Recipe: Vegetarian Sloppy Joes

I have to admit that this won't be the most healthy recipe that I have posted here, but I am sure that it is more healthy than the meaty original. I try to eat fairly healthy but sometimes I too crave something hearty and comforting. All though I have never ate a Sloppy Joe in my life, I saw it somewhere and I really wanted to make an easy and cheap version of it. So I combined ideas from several sources and came up with my own version.

Please do excuse the look of the Sloppy Joe. This is a typical case of it tastes better than it looks. Brownish food is already hard enough to photograph as it is, and that we are reaching the point that I have to use my flash during the daytime, that doesn't help. Anyway, on to the recipe:

Vegetarian Sloppy Joes (makes 4)
- 4 buns
- 200gr crumbled soy ground meat replacement
- 1 small shallot
- about a handful of mushrooms
- 1/4 cup vegetable stock
- 3/4 cup vegetarian barbecue sauce
- some grated cheddar cheese
- vegetable oil
- lettuce of choice

Dice and slice the shallot and mushrooms. Heat some oil in a pan and bake the shallots shortly. Then add the mushrooms, soy meat replacement, barbecue sauce and stock. Cook for about 5 minutes until it is heated up nicely.Arrange some stuffing on a bun with some grated cheddar and lettuce on top and enjoy!

There are a lot more ways to make vegetarian or even vegan Sloppy Joes. I saw recipes that use red kidney beans or lentils for example. I reckon that these would be more healthy, but I went for the fast way this time ;)

  1. It looks really tasty! I still want to try and make them (after seeing a few recipes this week). Will probably try with lentils because I'm not a fan of soy mince :S

  2. I didn't have red lentils at hand, in fact I never had them before. But I was lazy and didn't feel like cooking dried lentils for 45 minutes ;)

  3. Ondanks dat het op de foto er niet zo heel lekker uit ziet, kan ik me heel goed indenken hoe het smaakt hoor ;)
