#106 - Dutch Spiced Muffins & Soup Bento

This bento is from last week when I had school. I just had to take more soup with me because the last time it was a huge success.


The bento contains cauliflower soup (recipe behind the link) decorated with black sesame seeds, a broccoli muffin (recipe behind the link) and Dutch Spiced Muffins. There is some soy butter in the cup to go with the Dutch Spiced Muffins.

I found the recipe on the Dutch blog Spaarcentje kookt. So the Dutchies can just click on the link. For the non-Dutchies I will translate the recipe here, including how you can make your own Dutch Spice Mix. The muffins on her blog are even sugar free, but I don't have the stevia she uses, so I made them with sugar. They are also easy to make vegan since you can replace the milk with soy or nut milk. They are low budget and I have never seen an easier muffins recipe than this one.

Dutch Spiced Muffins (makes 12)
- 250 grams wheat flour
- 4 or 5 tsp Dutch Spice Mix*
- some salt and pepper
- 2 tsp baking powder
- 250ml milk (or soy milk etc)
- 150gr sugar

Mix all the dry ingredients together in a bowl. Lastly add the milk and stir it in with a spoon. Scoop the batter into a muffin tin and place them in a pre-heated oven for 18 minutes on 180 degrees. Let them cool down a bit and cut them in half. Serve with a little butter.

*To make your own Dutch Spice Mix:
- 6 tsp cinnamon
- 2 tsp ginger powder
- 2 tsp nutmeg
- 2 tsp cardamom
- 2 tsp clove
Or you can replace it with gingerbread spices. I believe they come pretty close.

  4. Looking good Uniflame! You definitely have a taste for muffins :) Coincidently I baked some vegan breakfast muffins on Tuesday that are partly similar! And super healthy. :) They came from PuurPlantaardig so you can try them yourself! :)

    And I loooove that Miffy tumbler -- where did you get it? Probably abroad on the InternetZ LOL.
