Monday: Pasta with spinach, cream cheese, mushrooms and sundried tomatoes (see recipe index)
Tuesday: No time to cook so something easy or take out
Wednesday: Baked endive mashpot (see recipe index)
Weekend Baking: Lychee cupcakes with coconut glaze (Vegan cupcakes take over the world P122)
