Weekend Cooking: Herbal Cheese Pancakes

Before I got this book, I never baked my own pancakes. Pancakes was my avoidance recipe because I am terrible at flipping them. They always break. But this recipe looked so good that I made them anyway. However I did let someone else bake them for me after I made the batter. This was all a few years ago, and I have gotten a bit better with flipping pancakes, but I am still not that good at it ;) Even though I made this recipe for the first time a few years back, it is still a recipe that I return to, if I need a comfort food pancake. I have to say though, that this is not a pancake for people on a diet because of all the cheese and cream. The recipe comes from the book "Heerlijke Pannenkoeken en Flensjes" by Carine Buhmann. It is translated from German to Dutch but I haven't found on English translation. Still I hope you will enjoy the recipe since it is perfect for lunch because you eat the pancakes cold.


Herbal Cheese Pancakes:
For the pancakes:
- 300 ml milk
- 2 tbsp fresh herbal cheese
- 3 eggs
- 100 gr wheat flour
- a bit of salt
- fresh chives
- oil for baking

For the filling:
- 125 gr fresh herbal cheese
- 125 gr sour cream
- more fresh chives
- salt & pepper

For the batter mix the milk, cheese and eggs. Add the flour and the salt and stir till you get a smooth batter. Cut the chives and add this. Cover the batter with a tea towel and let it rest for 30 minutes. For the filling mix up the sour cream and the cheese. Add some cut chives and mix in some salt and pepper to taste. Put this in the fridge for later. Put a bit of oil in the pan and bake 8 pancakes. Don't forget to add some oil in between. Let the pancakes cool down. Spread the filling over the pancakes, roll them up. If you want to add them to a bento, cut them gently in rolls.

  1. I love pannenkoeken -- I remember eating quite a few savory pancakes when I was in the Netherlands. Yummmmy. I'll have to try these, they would be nice in a bento!

  2. My experience with pancakes has been limited to the sweet variety - add ins are always chocolate chips or fruit. This has my mouth watering though, and I'm sure my husband would love them, too!

  3. We ate pancakes several times a week, sometimes for dinner when my daughter was little. I don't believe I've ever tried a savory variety tho..these look yummy :)

  4. Those look delicious. I just had my 3 year-old twin grandchildren staying with me and one of the foods they would eat without a fuss was pancakes!

  5. They remind me a little bit of crepes with vegetables inside, all rolled up. Yours look beautiful. The only secret I know about flipping regular pancakes is having them cook until little bubbles show on the top. That's when they are ready to turn over. Otherwise they might still be runny.
